Lemon Pie Recipe


The other day my sister and I decided to make a little lemon pie. We've just made one lemon pie before and that was years ago, so I started looking for recipes and, since I didn't really like any of them completely, I took like three different ones and with them I created one I actually liked, so I thought of sharing it with you :)

I'm going to separate this recipe into three parts, just like I did when creating it and making the pie ourselves: crust, filling and cream. So let's begin!

By the way, this was, like I said, a little lemon pie (about 5-6 servings).

Crust
Ingredients:
  • 6 crackers
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted, melted butter
We started by putting the crackers in a zip-lock bag and then we smashed them with a wooden kitchen mallet till they turned into dust (makes for great therapy). After that, we put what remained of the crackers in a bowl and added the sugar and started mixing them. Then we added the remaining ingredients and mixed them all together. You can just use a whisk for this, that's what we did.


And that's it! After that we just put it in the little container we had for the pie.


Filling
Ingredients:
  • 1 1/4 cups sugar
  • 1 1/2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 2 tablespoons butter
  • 1 cup water
  • 1 lemon (juice and zest)
  • 2 egg yolks, beaten
 

Something I knew that I didn't want in our recipe was having to use the oven, I wanted something quick and easy, so for this part you're only going to need a saucepan.

So we took the saucepan and whisked together the flour, cornstarch, salt and 1 cup of sugar. Then we added the water, the lemon juice and zest. We cooked that over medium heat, stirring from time to time till it came to a boil, that's when we added the butter, egg yolks and 1/4 cup of sugar. We then kept stirring the mixture until it became thick.

 

After that, we just removed it from heat and poured the mixture into the little container, on top of the crust.


Cream
Ingredients:
  • 2 egg whites
  • 2 tablespoons sugar 

For the cream, we put the egg whites and sugar in a bowl and whipped until stiff.


And I just love to turn it upside down and see gravity not do its job!

Finally, we put the cream on top of the filling and this is how it looks:


We kept it refrigerated for a few hours and see how pretty it looked! (And it tasted awesome too).


My sister and I ended up loving the crust, we might just as well smash some crackers, mix them with sugar, salt and butter and eat that as dessert too :P
